Dinner Recipe- Lemon, Butter And Caper Zucchini Noodles

This healthy dinner is SO flavorful you won't even believe you're eating zucchini instead of pasta. It has a tangy bite from the lemon and capers with a buttery, garlicky, flavorful sauce that will keep you totally satisfied. Who says healthy has to be boring?

Ingredients

Zucchini 3 Large , made into noodles using a spiralizer
Butter 2 Tablespoon
Olive oil 1 Tablespoon
Shallots 3 Small , diced
Garlic 3 Clove (15 gm) , minced
Salt To Taste
Pepper To Taste
Red pepper flakes 1/4 Teaspoon
Sun dried tomatoes 1/2 Cup (8 tbs) , chopped
Lemon 1 , zested, juiced
Capers 1/4 Cup (4 tbs) , drained
Toppings 1/2 Cup (8 tbs) ((Chopped fresh parley, Pine nuts, Grated Parmesan))

Directions

MAKING:                        

In sautepan, melt butter and olive oil.

Add shallots, garlic, salt, pepper, red pepper flakes and saute for 2-3 minutes.

Add zucchini noodles and stir well. Cook for 5 minutes.

Add sun dried tomatoes, lemon zest, lemon juice, capers and stir well. Cook for another 2-3 minutes.

Top with desired toppings before servings.
