This healthy dinner is SO flavorful you won't even believe you're eating zucchini instead of pasta. It has a tangy bite from the lemon and capers with a buttery, garlicky, flavorful sauce that will keep you totally satisfied. Who says healthy has to be boring?
Zucchini | 3 Large , made into noodles using a spiralizer | |
Butter | 2 Tablespoon | |
Olive oil | 1 Tablespoon | |
Shallots | 3 Small , diced | |
Garlic | 3 Clove (15 gm) , minced | |
Salt | To Taste | |
Pepper | To Taste | |
Red pepper flakes | 1/4 Teaspoon | |
Sun dried tomatoes | 1/2 Cup (8 tbs) , chopped | |
Lemon | 1 , zested, juiced | |
Capers | 1/4 Cup (4 tbs) , drained | |
Toppings | 1/2 Cup (8 tbs) ((Chopped fresh parley, Pine nuts, Grated Parmesan)) |
MAKING:
In sautepan, melt butter and olive oil.
Add shallots, garlic, salt, pepper, red pepper flakes and saute for 2-3 minutes.
Add zucchini noodles and stir well. Cook for 5 minutes.
Add sun dried tomatoes, lemon zest, lemon juice, capers and stir well. Cook for another 2-3 minutes.
Top with desired toppings before servings.
