Betty's Ice Cream Muffins -- Thanksgiving

In this video, Betty demonstrates how to make Ice Cream Muffins. These are delicious muffins that may be made with as few as 2 ingredients. I am placing these muffins on my Thanksgiving table, because they are fairly unique and also very easy!


Self rising flour 2 Cup (32 tbs)
Softened vanilla ice cream 2 Cup (32 tbs)
Eggs 1 , well beaten (Optional)
Vegetable oil 2 Tablespoon (Optional)



1. Preheat oven to 425 degree F.

2. Butter and flour a muffin tin and set aside.


3. In a large mixing bowl, place flour and ice cream. Beat until smooth.

4. Add egg and vegetable oil for richer muffin and beat well.

5. Fill prepared muffin tins with batter, about 2/3 of the way up.

6. Pop the tin in oven and bake for about 10 minutes (watch carefully, because these muffins brown very fast). Remove from oven and place on wire rack to cool.


7. Serve with tea and enjoy!
