Semi-Sweet Chocolate Muffins

For all chocolate lovers out there, here is an absolute treat. When you cannot stop having something chocolaty, yet wish to avoid too much sweetness, here is your dream delight - a chocolate muffin. Adding in a considerably lower quantity of sugar would give you tasty semi-sweet muffins.

Ingredients

All purpose flour 1 Cup (16 tbs)
Cocoa powder 6 Tablespoon
Baking powder 1 1/2 Teaspoon
Granulated sugar 6 Tablespoon
Salt 1/4 Teaspoon
Whole milk 3/4 Cup (12 tbs)
Melted butter 1 Tablespoon
Vegetable oil 2 1/2 Tablespoon
Eggs 1 Medium , beaten
Vanilla extract 1/2 Teaspoon
Semi sweet chocolate chips 3/4 Cup (12 tbs) , divided (1/4 Cup set aside for sprinkling on top)
For greasing the muffin pan
Butter 1 Teaspoon (As needed for greasing)

Directions

GETTING READY

1. Preheat oven to 350° F. Grease a muffin pan with a little butter and set aside.

MAKING

2. In a large bowl, combine the flour, cocoa powder, baking powder, sugar and salt. Set this aside.

3. In a separate bowl, combine milk and the melted butter. Then add the oil, and finally whisk in the beaten eggs.

4. Whisk just for a couple of minutes. (Do not overmix)

5. Using a spatula, gently fold 1/2 cup of semi-sweet chocolate chips into the batter.

6. Carefully spoon the batter into individual servings of the greased muffin pan.

7. Finally, sprinkle the remaining chocolate chips onto the tops of the muffins, pop into the oven immediately and bake for about 20 - 25 minutes or until a toothpick inserted into the center of a muffin comes out clean.

8. Once done, take the muffin pan out of the oven and let the muffins cool in the pan for about 5 minutes.

9. After 5 minutes, remove them onto a rack to cool further.

SERVING

10. Serve as it is and enjoy!
