Strawberry Muffins

In the beginning of summer the strawberries are bountiful and delicious in Florida. One of my favorite memories as a kid was going to pick strawberries with my family then coming home and making delicious pies and other treats. This is another great recipe that you can use with those strawberries that are a getting a little too overripe to eat fresh, but you dont want to throw them away! Theyre super easy and have a light and fluffy consistency. The streusel on top just adds a little extra something special!

Ingredients

Fresh strawberries 2 Cup (32 tbs) , diced
For dry ingredients
All purpose flour 3 Cup (48 tbs)
Sugar 1 1/2 Cup (24 tbs)
Baking powder 1 Tablespoon
Baking soda 1/2 Teaspoon
Salt 1/4 Teaspoon
Cinnamon 1 1/2 Tablespoon
For wet ingredients
Milk 1 1/4 Cup (20 tbs)
Eggs 2
Unsalted butter 1 Cup (16 tbs) , melted and cooled
Vanilla extract 1 Teaspoon
For streusel topping
Unsalted butter 1/4 Cup (4 tbs)
Cinnamon 1 Teaspoon
Brown sugar 1/4 Cup (4 tbs)
All purpose flour 1/2 Cup (8 tbs)

Directions

GETTING READY

1. Preheat the oven to 375 F.

2. Spray the muffin tin with baking spray and set aside.

MAKING

3. In a bowl, put all the dry ingredients, mix well and set aside.

4. In another bowl, put all the wet ingredients and whisk until well combined.

5. Add the strawberries and fold lightly with a spatula.

6. In the muffin tin scoop the batter equally, among the muffin cups.

7. Mix all the ingredients for the streusel topping in a bowl and sprinkle this mixture over the batter.

8. Bake in the oven for 20 to 25 minutes or until it puffs up and gets light brown in colour.

9. Let the muffins cool in pan for 10 to 15 minutes.

SERVING

10. Serve it as desired.
