Gingerbread Muffins

Lynn demonstrates how to make Gingerbread Muffins. This would be a great addition to a Holiday breakfast table or to have for a snack.


All purpose flour
Brown sugar 1/2 Cup (8 tbs)
Molasses 1/2 Cup (8 tbs)
Milk 1/3 Cup (5.33 tbs)
Vegetable oil 1/3 Cup (5.33 tbs)
Eggs 1
Baking powder 1 Teaspoon
Ginger powder 1/2 Teaspoon
Salt 1/2 Teaspoon
Baking soda 1/2 Teaspoon
Cinnamon powder 1/2 Teaspoon
Allspice 1/4 Teaspoon
For glaze
Butter 1 Tablespoon
Sugar 1 1/4 Cup (20 tbs) , powdered
Milk 2 Tablespoon



1. Preheat the oven at 400°F. Line the muffin tray with muffin cups.


2. In a large bowl, beat brown sugar, molasses, milk, oil and egg with a whisker.

3. Stir in remaining ingredients just until flour is moistened.

4. Scoop out the batter evenly into the muffin cups.

5. Bake for 20 minutes at 400 degrees F.

6. Take out the muffins in a rack and let it cool.

7. Meanwhile make glaze – in a bowl take all the ingredients and mix well.


8. Glaze the muffins with sugar mixture.


9. Serve Gingerbread muffins with milk, tea or coffee.
