A perfect tea time muffin!
Bran | 1 Cup (16 tbs) | |
Buttermilk | 1 Cup (16 tbs) | |
Butter | 1/3 Cup (5.33 tbs) | |
Brown sugar | 1/2 Cup (8 tbs) | |
Honey | 2 Tablespoon | |
Eggs | 1 | |
All purpose flour | 1 Cup (16 tbs) | |
Baking powder | 2 Teaspoon | |
Baking soda | 1/2 Teaspoon | |
Salt | 1 Teaspoon |
GETTING READY
1. Preheat oven to 375 degree F.
2. In a bowl, mix bran and buttermilk. Allow it to soak.
3. Line a muffin tin with liner.
MAKING
4. In a separate bowl, combine butter and sugar. Cream it together.
5. Drop honey and egg. Beat to incorporate.
6. Drop buttermilk soaked bran in the bowl. Mix and set aside.
7. In a medium sized bowl, mix together flour, baking soda, baking powder, and salt.
8. Throw dry mixture into the bowl with wet ingredients. Mix just to incorporate. Do not over mix.
9. Scoop and drop the batter in the prepared muffin tin.
10. Pop muffin tin in oven and bake for 15-20 minutes. Remove from oven and allow it to cool on wire rack.
SERVING
11. Serve honey bran muffin with a cup of hot coffee.
