Orange Cranberry Muffin

A perfect blend of orange and cranberry makes it absolutely delicious.


For cranberry
Cranberries 1 Cup (16 tbs) , chop
Sugar 1/4 Cup (4 tbs)
Other ingredients
All purpose flour 1 1/2 Cup (24 tbs)
Baking powder 2 Teaspoon
Salt 1 Teaspoon
Cinnamon 1/2 Teaspoon
All spice 1/4 Teaspoon
Eggs 1
Orange zest 1/2 Teaspoon
Orange juice 3/4 Cup (12 tbs)
Melted butter 1/3 Cup (5.33 tbs)
Pecan pieces 1/4 Cup (4 tbs)



1. Preheat oven to 375 degree F.

2. In a small bowl, combine chopped cranberries and sugar. Set aside.

3. Line a muffin tin with liner.


4. In a large mixing bowl, add flour, sugar, baking powder, salt, cinnamon, and all spice. Mix well.

5. In a separate bowl, combine egg, orange zest, orange juice, and butter. Whisk well.

6. Make a well in the center of dry mixture and pour egg mixture into it. Mix together just until moist. Do not over mix.

7. Throw cranberries and pecan. Fold to incorporate.

8. Pour the batter in the prepared muffin tins.

9. Pop the muffin tin in oven and bake for 15-20 minutes.


10. Serve orange cranberry muffin with a beverage of choice.
