Oatmeal Banana Muffins

Ingredients

Softened butter/Oil 1 Ounce
Eggs 2
Mashed bananas 1 Cup (16 tbs) (Use 2 Or 3 Medium
Honey 1/2 Cup (8 tbs)
Yogurt 1/4 Cup (4 tbs)
Baking soda 1 Teaspoon
Whole wheat pastry flour
Rolled oats 1 Cup (16 tbs)

Directions

GETTING READY

1) Preheat oven to 375°F.

2) Butter 18 muffin cups.

MAKING

3) In a mixer bowl, combine butter or oil, eggs, bananas, and honey.

4) Mix together yogurt and baking soda and add to first mixture.

5) Cream well.

6) Add flour to creamed mixture, mixing until just blended.

7) Stir in oats.

8) Fill muffin cups two-thirds full of batter.

9) Bake 18 to 20 minutes.

10) Remove from pans and cool on wire rack.

SERVING

11) Serve the oatmeal banana muffins as snack.
