Plain Muffins

Ingredients

All purpose flour 2 Cup (32 tbs)
Baking powder 2 1/4 Teaspoon
Salt 1/2 Teaspoon
Sugar 2 Tablespoon
Egg 1
Milk 1 Cup (16 tbs)
Melted butter 3 Tablespoon

Directions

Sift flour, measure and resift with baking powder, salt and sugar 3 times, the last time into a mixing bowl.

In another bowl, beat the egg thoroughly, add milk and melted butter.

Pour these liquid ingredients all at once into the dry ones.

Stir quickly until the flour is just dampened; then give 4 or 5 more quick stirs.

The batter should not be smooth, but a little lumpy.

Dip the batter quickly into greased muffin pans, filling them about 2/3 full.

If batter pulls rather than drops cleanly from spoon, it has been overmixed.

Bake in a moderately hot oven (425° F.) for about 20 minutes until golden brown.

Serve immediately.

Makes about 12 medium muffins.
