Red Velvet Muffins - Christmas

Lynn demonstrates a muffin recipe that is perfect for a Christmas morning breakfast or brunch. It is also very good to have for a snack. These Red Velvet Muffins have 3 different kinds of chocolate and are delicious. Adapted from Lemons for Lulu.


Unsalted butter 3 Tablespoon
Bittersweet chocolate 1 1/2 Ounce
Flour 2 Cup (32 tbs)
Cocoa powder 1/3 Cup (5.33 tbs)
Baking powder 2 Teaspoon
Salt 1/4 Teaspoon
Baking soda 1/8 Teaspoon
Sugar 2/3 Cup (10.67 tbs)
Milk 2/3 Cup (10.67 tbs)
Vanilla 1/2 Teaspoon
White chocolate chips/Semi sweet chocolate chips
Beaten eggs 1/4 Cup (4 tbs)



Preheat oven to 425F.

Line muffin tray with paper liners.


In a bowl, combine butter, chocolate and microwave until melted.

Stir every 15 seconds until smooth. Allow to cool completely.

In a large bowl, combine flour, cocoa powder, baking powder, salt, baking soda and whisk well.

In a separate bowl, combine sugar, milk, eggs, vanilla, food coloring and stir well.

Add chocolate mixture and milk mixture into flour mixture. Stir until combined.

Fold in chocolate chips and gently stir the mixture.

Using ice cream scoop, drop dough into lined muffin pan.

Pop into oven and bake for 5 minutes.

Reduce temperature to 375F and bake for 10 minutes.

Once done, allow to cool completely before serving.
