It's fall in your mouth with these Apple Cinnamon muffins. They are moist, full of apple chunks and very much in the theme of fall. A subtle combination of cinnamony, spicy goodness and apples is bliss! The smell that exits your oven while these are baking is heaven.

Granulated sugar | 1 1/2 Cup (24 tbs) | |
Whole eggs | 2 | |
Vegetable oil/Applesauce | 1 Cup (16 tbs) | |
Vanilla extract | 1 Tablespoon | |
Salt | 1 Teaspoon | |
Cinnamon | 1 Teaspoon | |
Baking soda | 1 Teaspoon | |
All purpose flour | 3 Cup (48 tbs) | |
Brown sugar | 1/3 Cup (5.33 tbs) ((for sprinkling the tops)) | |
Lemon juice | 1 Tablespoon ((to prevent browning)) |
GETTING READY:
Squeeze lime juice over apple pieces to prevent browning.
Preheat oven to 350°F/ 180°C.
Line muffin tray with liners.
MAKING:
In a bowl, whisk together eggs, sugar, oil and vanilla extract.
Add cinnamon, baking soda, salt and mix until well-blended.
Add the flour and mix well.
Fold in apple chunks until well incorporated.
Scoop the mixture and fill 3/4th of liners. Sprinkle brown sugar over top and pop into oven.
Bake for 20-24 minutes and once done allow to cool completely.
