Chopped apples | 1 Cup (16 tbs) , peeled | |

GETTING READY
Preheat oven to 400 degrees F. Grease a muffin tin with cooking spray and set aside.
MAKING
In a bowl, whisk together the flour, baking powder, salt, and cinnamon.
In a separate bowl, mix together the applesauce and egg, followed by the buttermilk and honey.
Add the vanilla and stir well.
Stir the flour mixture into the applesauce mixture and mix until just combined. Fold in the apples.
Pour batter into the prepared muffin cups, about 3/4 full and bake 20 minutes, or until a wooden pick inserted in the center comes out clean.
SERVING
Serve the muffins with some warm milk.
