Pumped Apricot Muffins (Oil Free and Vegan)

Healthy and easy, oil free vegan muffins.

Ingredients

Ground flax seeds 1/4 Cup (4 tbs) , mixed with 3/4 cup of water
Canned pumpkin 14 1/2 Ounce
Mashed banana 1 Cup (16 tbs)
Chopped apricots 1 Cup (16 tbs)
Chopped pecan 1/2 Cup (8 tbs)
Whole wheat pastry flour 3 1/4 Cup (52 tbs)
Evaporated cane juice sugar 1 1/2 Cup (24 tbs)
Baking powder 2 Teaspoon
Ground cinnamon 2 Teaspoon
All spice 1/2 Teaspoon
Baking soda 1/2 Teaspoon
Ground nutmeg 1/2 Teaspoon
Salt 1/2 Teaspoon

Directions

GETTING READY

1. Preheat oven to 350F.

MAKING

2. In a bowl, mix together all ingredients.

3. Spoon the mixture in a large muffin pan. Bake at 350F for 30 minutes.
