Microwave Meyer Lemon Curd

If you love Meyer Lemon Curd but don't enjoy sitting over the stove until it's done, you'll be thrilled to try my Microwave Meyer Lemon Curd. It's quick, easy and delicious!


Granulated sugar 3/4 Cup (12 tbs)
Meyer lemon juice 1/2 Cup (8 tbs)
Eggs 3



In a large bowl, add in all the ingredients and whisk well.

Place in the microwave for 4 minutes; stirring after every 1 minute.

Take out the lemon curd from the microwave and stir until cool.

Cover with the saran wrap and remove any air. Refrigerate for 30 minutes.


Serve over the pound cake.
