A very easy and inexpensive recipe, for El Pollo Loco chicken, grilled on my Weber.
Chicken | 3 3/4 Pound , halved | |
For marinade | ||
White wine vinegar | 2 Tablespoon | |
Garlic cloves | 4 , minced | |
Sea salt | 2 Teaspoon | |
Dry oregano | 2 Teaspoon | |
Fresh ground pepper | To Taste | |
Chili sauce | 1 Teaspoon | |
Pineapple juice | 12 Ounce | |
Fresh lime juice | 1/4 Cup (4 tbs) | |
Cooking oil | 2 Tablespoon | |
Yellow food coloring | 16 Drop |
GETTING READY
1. In a mixing bowl, add white wine vinegar, garlic cloves, sea salt, oregano, pepper, chili sauce, pineapple juice, lime juice, cooking oil and yellow food color, mix together. Place the chicken along with the marinade in a zip loc bag and allow to marinate for 4 to 6 hours.
2. Preheat grill.
MAKING
3. Place chicken on the grill at a region of indirect heat, grill at about 375F for about 45 minutes or until the internal temperature reaches 165F. After that place at direct heat for few minutes.
SERVING
4.Serve with rice and kidney beans.
