Tex Mex Recipes on the Grill

Here is my interpretation of Tex Mex grilling! Butterflied Tri-Tip Fajitas, Dutch oven Red Rice and Bacon Refried Beans Cooking Everything Outdoors Style!

Ingredients

For the beans
Bacon pieces 4
Canned pinto beans 16 Ounce , drained (1 Large Can)
Bean broth 1 Cup (16 tbs)
Salt To Taste
Freshly ground black pepper To Taste
For fajitas
Tri tip steak 3 Pound , butterflied and marinated in tex mex marinade
Yellow pepper ring 8
Red pepper rings 8
Seasoning salt To Taste
Cilantro 2 Ounce , chopped
Tortillas 6
Lime 2 , juiced

Directions

For Bacon re-fried beans

GETTING READY

1.Preheat the Iron skillet on a grill at around 300 F.

MAKING

2.Sizzle the bacon on the iron pan. When the bacon has released about 1/4 cup of grease, add beans to the pan and mix.

3.Season with sea salt and mash the beans fairly well with the cowboy blender.

4.Pour 1/2 a cup of bean broth to the pan, season the beans with freshly ground black pepper and a little bit salt. Blend it again. Heat up and let it cook for some more time, until its all well blended.

For Fajitas

GETTING READY

1.Preheat the grill to about 350 to 375 F.

2.Season yellow pepper, red pepper and onion slices with seasoning salt and set it aside.

MAKING

3.Place the trip tip steak over hot iron grill stone, shut the lid and cook it for 3-4 minutes on each side. Take it off the grill and let it rest for sometime.

4.Saute the seasoned vegetables on the grill stone in the juices of the tri tip. Close the lid, and let them cook until the vegetables are soft.

5.Garnish with Cilantro and lime juice.

6.Cut the trip tip across the grain.

7.Warm the tortillas on the grill.

SERVING

8.In a serving dish; place beans, pre-made mexican rice, tri tip, vegetables and tortillas and serve hot.
