Mexican Pie

A "glorified burrito", this mexican pizza pie tart is a prettier way to serve a simple mexican-flavored dish. Lots of beans, lots of veggies, all vegan.

Ingredients

Vegan pie crust 1
Canned refried beans 4 Tablespoon
Red onion 1/2 Small , sliced
Green bell pepper 1/2 Small , sliced
Canned black beans 1/2 Can (5 oz) , rinsed
Chopped fresh cilantro 1/4 Cup (4 tbs)
Salsa/Tomatoes 1/4 Cup (4 tbs)
Chopped green onion 1 Tablespoon
Avocado 1 Small , sliced
Lime 1 , juice extracted

Directions

GETTING READY

1. Preheat the oven to 375 degrees F.

2. Bake the pie shell according to the package directions.

MAKING

3. Spread the refried beans evenly over the shell and top with onions, green bell pepper, and black bean.

4. Add in the cilantro, salsa, green onions and avocado. Bake for 15 minutes.

SERVING

5. Squeeze lime juice over it and serve.
