How to Make Beer Marinated Chicken Tacos on the GrillDome

This weekend I fired up the Grill Dome and smoked some beer marinated chicken tacos with fresh guac. I also tried out a new salsa fro Sabor in Austin Texas.


For beer marinade
Dark mexican beer 2 Cup (32 tbs)
Dark sesame oil 1/4 Cup (4 tbs)
Finely chopped garlic 2 Tablespoon
Dried oregano 2 Teaspoon
Kosher salt 2 Teaspoon
Fresh ground black pepper 1 Teaspoon
Ground cayenne pepper 1/2 Teaspoon
Other ingredients
Boneless skinless chicken thigh 6 (as needed)
Skinless chicken breast 4 Small (as needed)
Corn tortillas 12 , warmed (as needed)



For Beer Marinade:

1. In a large bowl, combine beer, sesame oil, garlic, oregano, salt, black pepper, and cayenne pepper. Mix well.

2. Place chicken thigh and breast into the marinade, cover with plastic wrap and marinate for 3-6 hours or overnight.

3. Preheat grill to 225 degree F.


4. Place chicken on grill, cover and smoke for 1 ½- 2 hours.


5. Slice chicken and serve on top of tortillas with some guacamole and Mexican salsa.
