Chipotle Sweet Potato Hash

Here's a great idea for your next breakfast or brunch! Chipotle does amazing things to sweet potato.

Ingredients

Grated sweet potatoes 2 Cup (32 tbs) , grated
Olive oil 2 Tablespoon
Chipotle adobo sauce 2 Tablespoon
Salt and pepper To Taste

Directions

MAKING

1. Squeeze the sweet potatoes and drain all the water. Place in a medium bowl and set aside.

2. In a shallow bowl, mix together olive oil and chipotle adobo sauce.

3. Coat the bottom of a pan with olive oil mixture and lay down the sweet potatoes. Place on the stove and cook until browned from both sides.

SERVING

4. Garnish with cilantro and serve.
