This Mexican rice recipe is very easy and quick to make. . . The taste of chili garlic paste added along with vegetables makes it a perfect recipe. . .


Cooked rice 3 Cup (48 tbs)
Oil 3 Tablespoon
Thinly sliced onion 1/2 Cup (8 tbs)
Finely chopped tomato 1/2 Cup (8 tbs)
Thinly sliced capsicum 1/2 Cup (8 tbs)
Salt To Taste
Mixed boiled vegetables 1 Cup (16 tbs) (sweet corn , carrot and french beans)
For chili garlic paste
Whole dry kashmiri red chilies 5 (4

1. In mixer, grind Kashmiri chilies and garlic coarsely or pound into a coarse mixture.


2. In a non-stick pan, heat oil, and saute onion over medium flame for 1-2 minutes.

3. Add the prepared chili-garlic paste, tomato, capsicum, and saute for 1-2 minutes.

4. Season with salt, sprinkle 2 tablespoons of water and cook for 1 minute.

5. Stir in mixed vegetables, 1 tablespoon of water, and cook for 1-2 minutes.

6. Add rice, season with salt to taste, stir occasionally and cook for 2-3 minutes.


7. Serve hot.
