How to Make Horchata - A Refreshing Mexican Drink with Rice and Cinnamon by Rockin Robin

My Horchata Recipe is a refreshingly delicious rice based Mexican drink made with milk, cinnamon, sugar and vanilla extract. Served over ice and a dusting of ground cinnamon will quench your thirst.

Long grain white rice 1 1/4 Cup (20 tbs)
Water 3 Cup (48 tbs)
Milk 1 Cup (16 tbs)
Half and half 1/4 Cup (4 tbs)
Cinnamon sticks 3 Medium
Ground cinnamon 1 Dash
Sugar 1/3 Cup (5.33 tbs)
Vanilla extract 1 1/2 Teaspoon

1. In the vita mix, add the rice and blend the rice until well broken. Once done place the rice in the strainer and rinse until water runs clear.

2. Place the rice in the mason jar and pour water, add cinnamon sticks and seal the jar and refrigerate for 24 hours.

3. Pour the rice into a container using a strainer and transfer it again into a larger mason jar.

4. Pour milk, half & half, sugar and vanilla extract, stir everything until sugar is dissolved.

5. Pour it in the glass which is filled with ice and sprinkle ground cinnamon on top.

6. Serve the Horchata immediately.

Do not throw the rice; use it to make rice pudding.
