Juicy Mortadella Burritos

If you like your burrito juicy and filling, here is a quick one to kick start your day. Make the tortilla wrap at home or use ready made ones to make your job easier. Stuff it up with your favorite fillings and even leftovers, if any, and there you have a one dish meal that is tasty and satisfying at the same time.

Ingredients

Tortilla wrap 4
Mortadella sausage 125 Gram , 4 slices (microwaved for a minute)
Cheese slice 40 Gram (2, 20 gm slices, cut into half, to give total 4 strips)
Tomato salsa 2 Tablespoon , divided
For scrambled egg
Salted butter 1 Teaspoon
Carrot 1 Small , chopped finely
Onion 1 Small , chopped
Eggs 3 Small
Herb seasoning 1/4 Teaspoon

Directions

GETTING READY

1. Make the tortillas, if you are not using the store bought ones. I made mine at home.

MAKING

2. Heat up butter in a pan and stir fry the carrots for a couple of minutes. When the carrots turn tender, put the onions and fry until the vegetables turn slightly crispy.

3. To this break in the eggs and scramble well.

4. Season with herb mix and remove from heat.

FINALIZING

5. Working with one wrap at a time – Heat a pan on low flame and place a cooked tortilla on it. Cut the mortadella slice into half and arrange it to spread evenly on both halves of the wrap. Now right in the middle put a spoonful or more of scrambled egg mix, top it with half a strip of cheese slice, followed by a tablespoon of salsa.

Repeat the process with other 3 burritos.

SERVING

6. Roll or fold up the wrap; enjoy biting into juicy and filling burrito. I had a few drops of salsa on my t-shirt and rolling down my lips and I totally enjoyed being a kid again! 

TIPS

I had a few bits of baked apples, which I added to the wrap. It enhanced the taste with a slight sweet taste.
