Protein Power With Tasty Beef Enchilada

A delicious beef enchilada is one dish you will certainly find on the menu of any Tex-mex joint or Mexican restaurant. The traditional beef enchilada consists of a corn tortilla rolled around a juicy meat stuffing and covered with a hot chili pepper sauce, topped with cheese....yummy! Here we make minor changes to up the nutritional value.


Lean ground beef (7% fat) 2 Pound
Red chili powder 2 Teaspoon
Garlic powder with parsley 1 Teaspoon
Salt & white pepper To Taste
Low sodium tomato chili sauce 8 Ounce
Low sodium hormel chili 1 Can (10 oz) (No Beans)
Fresh tomatoes 10 Ounce , chopped
Whole wheat tortilla 8
Reduced fat low sodium cheese 2 Tablespoon , shredded (Cheddar)



1. Preheat oven to 350 degrees F.


2. In a skillet, brown the ground beef with chili powder, garlic seasoning and salt to taste. Drain the grease.

3. Add the tomato chili sauce,and some more chili powder to taste (if you feel like). Simmer 15 minutes.

4. Heat the chili in a separate saucepan. Add chopped tomatoes to it and bring to a boil.

5. Warm tortillas according to package directions.

6. Fill each tortilla with 1/3 cup meat mixture.

7. Place fold-side down in ungreased rectangular baking dish. Do the same with all tortillas.

8. Mix any leftover meat with the chili, and pour over top of tortillas. Top with shredded Cheddar cheese. Cover with foil.

9. Bake for about 20 minutes at 350 degrees F. Uncover, cook 5 more minutes.


10. Serve hot along with a tall glass of chilled lemon soda or peach iced tea.
