Protein Packed Spicy Turkey Quesadilla

What could be more appealing than a tasty turkey quesadilla that simply sets your tongue on fire. So all those spice lovers, should surely have a go at this one. You could use any meat of your choice and just relish every spicy bite.


Whole wheat tortillas 3
Low fat low sodium mozzarella cheese 2/3 Cup (10.67 tbs) , shredded, divided
Spinach 1/2 Cup (8 tbs) , chopped finely
Lean turkey 1 Cup (16 tbs) , cooked and cut into bit sized chunks
Pinto beans 1/2 Cup (8 tbs) , cooked, drained
Jalapeno chile peppers 3 , thinly sliced
Green apple 1 , thinly sliced
Red chili pepper flakes To Taste
Salt To Taste



1. Heat the tortilla on a dry pan over medium heat and flip it over a few times until it is warmed through.

2. Spread 2 tbsp of shredded cheese over the entire tortilla.

3. On one ½ of the tortilla add some finely chopped spinach leaves, ½ cup of turkey, ¼ cup of pinto beans, a few jalapeno slices and 3 slices of apple (you'll love it!).

4. Sprinkle with ¼ teaspoon of thyme, red pepper flakes and salt to taste. Then add another 2 tablespoon of cheese and fold tortilla on top of itself.

5. Press down with spatula and flip. Cook until cheese is melted and tortilla is heated through. Allow a few minutes for quesadilla to cool down before slicing and enjoy!


6. Serve with guacamole and a tall glass of cranberry juice to cool off.
