Taco Pasta Salad - Light & Delicious

Rotini pasta seasoned generously with salsa and taco seasonings and tossed with avocados, green bell peppers, sweet corn, black beans, tomatoes, shredded cheese and romaine lettuce. Easy, light quick, and fresh! Great summer side dish for grilled meats or a filling, yet light lunch. Serve cold.

Ingredients

Rotini pasta 3 Cup (48 tbs)
Salsa 3/4 Cup (12 tbs) (or more as desired)
Taco seasoning 2 Teaspoon (or more)
Green bell pepper 1/2 , seeded, chopped finely
Black olives 1/2 Cup (8 tbs) , sliced
Red onion 1/2 Cup (8 tbs) , chopped finely
Cherry tomatoes 1 Cup (16 tbs) , cut into quarters
Sweet corn kernel 2/3 Cup (10.67 tbs)
Canned black beans 2/3 Cup (10.67 tbs) , drained, rinsed
Romaine lettuce 1 Cup (16 tbs) , chopped finely
Avocado 2 , cubed
Sharp cheddar cheese 1/4 Cup (4 tbs) , shredded
