Green Chile Cheeseburger

My version of New Mexico's famous Green Chile Cheeseburger! Inspired by the show, "Burger Land".

Ingredients

Mexican pepper 5 (4
Unsalted beef stock 1 1/2 Cup (24 tbs) (as needed)
Kosher salt To Taste
80/20 ground beef 1/2 Pound
Fresh black pepper To Taste
Queso fresco 25 Gram (as needed)
Oil 1 Tablespoon
Hamburger buns 2 , halved
Butter 1 Tablespoon (as needed)

Directions

GETTING READY

1. Roast pepper, peel off skin, remove the seeds, chop and set aside.

MAKING

2. In a saucepan, put chopped pepper and pour beef stock to barely cover it.

3. Season with salt and bring it to a boil. Reduce the heat and allow it to simmer until the liquid is absorbed. Set aside.

4. Meanwhile, divide meat into half and roll into patties.

5. Season with salt and pepper on both sides.

6. Place patties on hot greased grill and cook until done on both side.

7. Toast buns on grill with some butter.

8. Put simmered chili pepper on grill and cook until caramelized.

9. When done, top patties with caramelized pepper and cheese. Cook until cheese melts.

FINALIZING

10. Place patty on the bottom half of bun and cover it with the top.

SERVING

11. Serve immediately and enjoy!
