Betty's Game Day Nachos -- Super Bowl!

In this video, Betty demonstrates how to make Game Day Nachos. These were made for this year's Super Bowl parties, but they are great for any party or snack.

Ingredients

Ground beef 1 Pound (I used 85% lean ground round)
Salt 1 Teaspoon
Onion 1/2 Large , finely chopped (medium
Garlic 2 Clove (10 gm) , chopped finely
Taco seasoning 1 Tablespoon (homemade or you may use 1 package of store bought taco seasoning)
Refried bean 16 Ounce
Rotel mexican lime & cilantro diced tomatoes 10 Ounce , drained, reserving juice (you may use Rotel tomatoes of any flavor)
Corn tortilla 1 Pound (or more as needed)
Cheddar cheese 1 Tablespoon , finely shredded (as needed)
For garnish
Pickled jalapeno 1
Sour cream 1 Tablespoon (as needed)

Directions

GETTING READY

1. Preheat oven to 350 degree F.

MAKING

2. In a large, deep skillet add ground beef and salt. Place the skillet on medium heat, stir constantly and cook until meat is browned.

3. Add onion and garlic. Cook until onion and garlic are softened and clear.

4. Throw Taco seasoning and continue to cook until flavors are well combined.

5. Drain off all fat and set aside.

6. In a medium-sized pot, combine refried beans and diced tomatoes. Place saucepan on low flame, stir occasionally and cook until hot.

7. Combine the beans mixture with the ground beef mixture. Add reserved tomato juice if the mixture is too stiff or to get a spreadable consistency.

8. On a corn tortilla chip put a heaping teaspoonful of nacho mixture. Sprinkle cheese on top.

9. In an ungreased 13-inch by 9-inch by 2-inch Pyrex baking dish, lay the tortilla chip and repeat the process.

10. Place baking dish in oven and bake for 10 minutes or until the cheese melts. You may leave them longer, if you like the cheese browned and crusty. Remove from the oven.

SERVING

11. Serve nachos warm with sour cream and jalapeno garnish.

TIPS

You can freeze leftover nacho mixture and use it later.
