Chilis Chicken Enchilada Soup

This recipe tastes just like Chilis Chicken Enchilada Soup. Did you know they used to make this soup at the restaurant? You can make this soup just like they did.


Vegetable oil 1/2 Cup (8 tbs)
Chicken base 1/4 Cup (4 tbs)
Yellow onions 3 Cup (48 tbs) , diced
Ground cumin 2 Teaspoon
Chili powder 2 Teaspoon
Granulated garlic 2 Teaspoon
Cayenne pepper 1/2 Teaspoon
Masa harina 2 Cup (32 tbs)
Water 4 Quart , divided
American cheese 1/2 Pound , cubed
Chicken 3 Pound , cooked, deboned and cubed



1. In a large stock pot, add the vegetable oil and throw in the chopped onions.

2. Saute and add the spices and the chicken base. Saute everything together for about 5 minutes until the onions look translucent.

3. In a large mixing bowl, combine half the Masa Harina with 1 quart water. Stir until all the lumps dissolve.

4. Add to sauteed onions and bring to a boil. Once mixture starts to bubble, continue cooking 2-3 minutes, stirring constantly. This will ensure that the raw taste of Masa Harina is not there.

5. To the remaining Masa Harina, add a quart of water. Stir to mix just like before.

6. Add to the soup and let it come to a boil. Thereafter, let it simmer on medium heat to do away with the raw taste.

7. Turn off the heat and add the cubed cheese and cover it for a while.


8. Give the soup a stir and serve right away
