Involtini Con Salsa Di Alici

Whole boneless chicken breasts 1 1/2 Pound , split (4 pieces)
Prosciutto crudo 7 Ounce , thickly sliced
Thick italian bread slices 2
Freshly ground black pepper To Taste
Fresh bay leaves 2
Unsalted butter 1 Cup (16 tbs) , melted (2 sticks)
Anchovy fillets preserved in salt 12 , washed and filleted (6 whole anchovies)



1. Preheat oven to 400F.

2. Place chicken breasts on cutting board. Press them with one hand to flatten well. Slice the chicken breasts, just parallel to the board. Pound between the 2 sheets of waxed paper so that there are thin slices.


3. Make squares from prosciutto,slightly small than the chicken pieces. Make square pieces from the bread, each of 1 inches.

4. In a saucer ready the pepper.

5. Place prosciutto just in the center of the bread slice. Use your fingers to dip in the pepper and rub just over meat. Roll up the breasts easily.

6. On skewers thread the chicken rolls. Alternate with bay leaves and bread just like bread/bay leaf/ chicken roll/prosciutto.

7. In a roasting pan place the skewers. Pour 1/4 cup melted butter on skewers and place these on hot oven for 20 minutes.

8. In the rest of the butter ( 3/4 cup) dissolve all the anchovies by simply mashing them using a wooden spoon.

9. Heat butter.


10. Serve Involtini Con Salsa Di Alici wiith anchovy butter.
