Mexican Black Eyed Peas

Black eyed peas 16 Ounce , dried (1 package)
Bulk pork sausage 2 Pound
Onion 1 Medium , finely chopped
Canned whole tomatoes 28 Ounce , undrained (1 can)
Water 1/2 Cup (8 tbs)
Celery 2 1/2 Tablespoon , finely chopped
Sugar 2 Tablespoon
Chili powder 2 1/2 Tablespoon
Garlic salt 2 Teaspoon
Pepper 1/4 Teaspoon



1)In a large dutch oven soak washed peas overnight.


2)Use a heavy skillet to brown sausage , add onion into it and cook till it is tender.

3)Drain the soaked peas and add it in sausage.

4)All add tomatoes, celery,sugar,chili powder,garlic ,salt and pepper in the skillet .

5)Let it boil then simmer for 1 1/2 hours, add water if required.


5)Serve these delicious Mexican Black Eyed Peas with eggs or steak.
