Spicy Mexican Shrimp & Avocado Cocktail

Heres a shrimp cocktail with a spicy Mexican twist, just in time for your Cinco de Mayo party. Fresh ingredientsavocados, onion, jalapenosmake this dish a fiesta for the senses.

Ingredients

Shrimp 1 Pound ((((Boiled and chilled in refrigerator))))
Corona beer 1/2 Cup (8 tbs)
Clam juice 1/2 Cup (8 tbs)
Ketchup 1/3 Cup (5.33 tbs)
Lime juice 3 Tablespoon
Cilantro 1/3 Cup (5.33 tbs) , finely chopped
Red onion/White onion 2 Tablespoon , finely chopped
Jalapeno 3 Tablespoon , finely chopped
Avocado 2 , diced

Directions

GETTING READY

1. Cook shrimp in a medium pot of boiling salted water for one minute. Drain shrimp, then cool and chill.

MAKING

2. In a mixing bowl, stir together Corona Extra beer, clam juice, ketchup, lime juice, cilantro, onion, and jalapeño in a medium bowl. Stir in chilled shrimp, then gently stir in avocado.

3. Fill 4 cocktail glasses.

SERVING

4. You could serve this in a martini glass to make it look extra sexy as an appetizer.
