Huevos Rancheros - Breakfast Recipes

I actually dont know why Ive never tried making it before. And this is one of those dishes that requires no persuading to get the kids excited. Warm tortillas topped with eggs, melted cheese and creamy beans? Nothing could be better whether you've been eating Huevos Rancheros for years or for the very first time!

Ingredients

Oil 1 Teaspoon (vegetable or canola)
Eggs 4 Large
Corn tortillas 4
Refried beans 1 Cup (16 tbs)
Mild salsa 1 Cup (16 tbs)
Mexican cheese blend 1 Cup (16 tbs) , shredded

Directions

MAKING:                        

Heat a large skillet with oil over medium heat.

Add eggs and cook for 2 minutes. Cover and cook if needed.

Warm tortillas either on stove top or microwave.

Place over plate and spread warmed beans over it.

Top with egg, salsa and cheese.

 

SERVING:                       

Serve and enjoy!
