Chicken Pot Pie Quesadillas

Chicken pot pie quesadillas, what?! Creamy, cheese, chicken and vegetables inside a crispy tortilla.


Cooked shredded chicken 1 Cup (16 tbs)
Frozen mixed vegetables 1 Cup (16 tbs) , thawed
Cream cheese 4 Ounce
Minced celery 1/4 Cup (4 tbs)
Green onions 2 , minced
Jalapeno 1 , minced
Minced parsley/Cilantro 2 Tablespoon
Salt 1/4 Teaspoon
Pepper 1/4 Teaspoon
Grated cheese 1/2 Cup (8 tbs)
Flour tortillas 4



1.Mix chicken, vegetables and cream cheese with seasonings until everything is coated.

2.Lay tortillas out and sprinkle a tablespoon of grated cheese on half of each, spread 1/4 of chicken mixture, then sprinkle another tablespoon of cheese. Fold over and press lightly.

3.Cook over medium-low heat until all is warm and cheese is melted.


4.Serve and enjoy.
