1 can refried beans | ||
tortilla cups (I used Tostitos cup | shaped “Scoops.”)
sharp cheddar cheese, finely shredded
sour cream | ||
fresh tomatoes, finely diced
ripe olives, finely diced,
pickled jalapeno pepper rings |
Making
Place tortilla cups on ungreased baking pans. Set aside.
Place chili and refried beans in a medium-sized pot over low heat.
Heat and stir occasionally until mixture begins to bubble around the edges.
Place ½ teaspoon to 1 teaspoon of hot mixture into tortilla cups. Top with a sprinkling of cheddar cheese.
Bake at 350 degrees (F) for 10 minutes, or until cheese melts and tortilla cups are crisp and beginning to brown.
While the cups are still hot, place a dollop of sour cream on top of each cup.
Add tomatoes and olives on top of the sour cream. Top with a pickled jalapeno ring. Serve immediately and enjoy!
