Cinnamon Mexican Wedding Cookies (aka Snowballs) are part of Kin Community's annual cookie collaboration!
All purpose flour | 1 Cup (16 tbs) | |
Raw walnuts | 1 Cup (16 tbs) | |
Vanilla extract | 1/2 Teaspoon | |
Ground cinnamon | 1/2 Teaspoon | |
Unsalted butter | 1/2 Cup (8 tbs) | |
Confectioners’ sugar | 1/4 Cup (4 tbs) (plus additional for dusting) |
GETTING READY:
Preheat oven to 350°F.
MAKING:
Place walnuts in a food processor and process for 30 seconds.
In a bowl, combine ground walnuts, flour, cinnamon and mix well.
In a mixer, combine butter, sugar, vanilla extract and mix well for 3-4 minutes.
Add flour slowly and mix until combined.
Scoop out small quantities of dough and place on silpat.
Pop into oven and bake for 15 minutes.
Dust with confectioners’ sugar.
