Taco Casserole is a simple main dish, perfect for easy weeknight dinners, Super Bowl parties or kids sleep overs. Lightly seasoned beef is combined with beans, onion, corn chips and cheese. Baked until bubbling then topped with sour cream and salsa dip, this gorgeous dinner will keep everyone happy - give it a go!
|Beef mince/Ground beef||500 Gram|
|Brown onion||1 Small , chopped|
|Canned diced tomato||400 Gram (1 can)|
|Canned red kidney beans||400 Gram , drained and rinsed (1 can)|
|Canned cream of chicken soup||14 1/2 Pound (1 can)|
|Water||1/2 Cup (8 tbs)|
|Taco seasoning||35 Gram|
|Corn chips/Tortilla chips||300 Gram , lightly crushed|
|Grated cheese||2 Cup (32 tbs)|
|Sour cream||1/2 Cup (8 tbs)|
|Tomato salsa dip||1/2 Cup (8 tbs) (for topping)|
Preheat oven to 325°F/160°C.
Grease casserole dish with cooking spray.
In a large saucepan, heat oil and sauté onions for 2 minutes or until soft.
Add meat and cook until browned.
Add tomatoes, beans, taco seasoning, soup, water and mix well.
Allow to simmer for 5-10 minutes.
Place a bed of chips into casserole dish and top with beef mixture and cheese. Repeat layering and cover with aluminium foil.
Pop into oven and bake for 20-30 minutes.
Allow to cool slightly before serving.
Top with sour cream and salsa dip.
