Oil | 1 Teaspoon | |
Finely chopped onion | 1/4 Cup (4 tbs) | |
Jalapeno | 1 , chopped, seeded | |
Garlic | 1 Clove (5 gm) , minced | |
Ground cumin | 1/4 Teaspoon | |
Chopped tomatoes | 2 Cup (32 tbs) (fresh or canned) | |
Salt | To Taste | |
Pepper | To Taste | |
Butter | 2 Teaspoon | |
Eggs | 4 | |
Corn tortillas | 4 | |
Refried beans | 1 1/4 Tablespoon (for serving) | |
Chopped cilantro | 1 Tablespoon (for serving) |
GETTING READY:
1.Preheat oven to 350F.
2.Pop tortillas into oven and toast for 5-10 minutes or cook under broiler for 1-2 minutes per side until crisp.
MAKING:
3.Heat oil in a large skillet and sauté onions, jalapeno and garlic until soft.
4.Add cumin and fry for 30 seconds.
5.Add tomatoes, salt, pepper and stir well.
6.Cover with a lid, reduce heat and allow to simmer for 5 minutes.
7.Remove lid and make holes as shown in the video.
8.Drop butter into little wells and crack egg into each.
9.Cover with lid and cook for 5 minutes or until done.
10.Spread -1/3 cup refried beans on each tostada and top with egg with sauce.
11.Garnish with cilantro.
