Learn how to make fluffy mexican rice, just like you'd find in a Tex Mex restaurant. Soaking the rice first ensures fluffy rice grains.
Long grain white rice | 1 Cup (16 tbs) (dry) | |
Butter/Oil | 1 Tablespoon | |
Diced onion | 1/2 Cup (8 tbs) | |
Diced celery | 1/2 Cup (8 tbs) | |
Garlic | 2 Clove (10 gm) , minced | |
Bay leaf | 1 | |
Tomato paste | 2 Tablespoon | |
Rich chicken broth | 1 1/2 Cup (24 tbs) | |
Salt | 1/2 Teaspoon | |
Pepper | 1/2 Teaspoon |
GETTING READY:
Put rice in a sieve and place sieve in a bowl with water enough to cover the rice. Let it to soak for 15 minutes.
MAKING:
Drain rice and keep it ready.
In a saucepan, heat oil and sauté onion, celery, garlic and bay leaves.
Add rice, tomato paste, chicken broth, salt and pepper one after the other. Stir well.
Cover with a lid and bring to boil. Reduce heat allow to simmer for 5-15 minutes.
Turn off heat and fluff with a fork.
