Pork roast | 4 Pound , cut into 2 | |
Cumin seed/½ teaspoon ground cumin | 1 Teaspoon | |
Ground coriander | 1 Teaspoon | |
Orange | 1 , zested, juiced | |
Lemon/Lime | 1 , juiced | |
Garlic | 4 Clove (20 gm) , chopped | |
Salt | 1/2 Teaspoon | |
Water | 1 Cup (16 tbs) ((as needed)) | |
Corn tortillas | 8 | |
Chopped cilantro | 1 Tablespoon | |
Chopped onion | 1 Tablespoon | |
Hot sauce | 1 Tablespoon | |
Lemon juice | 1 Dash |
MAKING:
1.In a large pot, combine cumin seed, coriander and mix well.
2.Add orange zest, orange juice, lemon juice, garlic, pork cubes and mix well.
3.Add salt, enough water (4-6 cups) and bring to boil.
4.Reduce heat and simmer for 33 hours or until pork turns tender.
5.Remove meat from bone once water evaporates completely and discard bone if necessary.
6.Increase heat and fry the pork until meat is finely shredded and browned.
7.Stuff between corn tortillas and garnish with cilantro, chopped onion, lemon juice and sauce.
