Grandma's queso recipe! Easy and fast Tex-Mex cheese dip. My grandma made this Texas classic every Christmas eve.
Onion | 1 Large , diced | |
Bacon fat/Butter /margarine (oleo) | 2 Tablespoon | |
Canned tomatoes with green chiles | 29 Ounce (2 cans, 14 1/2 ounce ezch) | |
Velveeta cheese/Easy melt cheese | 2 Pound , cubed |
MAKING:
1.In a skillet, sauté onions in bacon fat until translucent of for about 5 minutes.
2.Add tomatoes with peppers and sauté well.
3.Add cheese and stir over medium heat until smooth and melted.
4.Optional ingredients like cooked chorizo, cooked beans, cooked bacon, beef taco filling, guacamole or avocado chunks etc., could be added during this stage.
SERVING:
5.Serve with tortilla chips and enjoy!
NOTES:
Keep warm in a slow cooker in low heat setting or double boiler.
Can be refrigerated for upto 2 weeks.
