Chicken Flautas And Guacamole With Average Betty!

This easy chicken flautas recipe with guacamole will be a hit at your next party! Sara from Average Betty makes her guacamole to go with my chicken flautas (aka taquitos)

Ingredients

For flautas:
Corn tortillas 8 (might want a few extra in case of cracking)
Boneless skinless chicken breast 1
Salt 1/2 Teaspoon
Chili powder 1/2 Teaspoon
Black pepper 1/4 Teaspoon
Frying oil 1 Cup (16 tbs) (corn, canola, peanut, For deep frying)
For guacamole:
Ripe avocados 2 , peeled, pitted
Diced seeded jalapeno 2 Tablespoon
Diced onion 2 Tablespoon
Chopped cilantro 2 Tablespoon
Diced seeded tomato 1/2 Cup (8 tbs)
Fresh lime juice 1 Tablespoon
Salt To Taste
Pepper To Taste

Directions

FOR FLAUTAS:

MAKING:

1.In a saucepan, poach chicken breast with enough water and cover with lid.

2.Bring to boil and turn off heat. Allow to stand for 10-15 minutes, drain and allow to cool.

3.Shred the chicken meat. Add chili powder, black pepper and mix well.

4.Soften tortillas using microwave or dry heating in a skillet.

5.Place chicken mixture on tortillas and roll as shown in the video. Tighten the roll using toothpicks.

6.Heat a skillet with oil to 350F. Place flatuas with seam side down and fry for 2 minutes. Turn and fry for another 2 minutes.

7.Drain excess oil using paper towels.

SERVING:

8.Serve with guacamole, salsa, sour cream, or cheese and enjoy!

FOR GUACAMOLE:

MAKING:

1.In a large bowl, mash avocados.

2.Add salt, pepper, jalapenos, onion, cilantro, tomato and lime juice one after other and mix well to combine.

3.Adjust seasonings to taste.

SERVING:

4.Serve with flautas and enjoy!
