Masa harina | 2 Cup (32 tbs) (8 ounces by weight) | |
Baking powder | 1 Teaspoon | |
Salt | 1/8 Teaspoon | |
Vegetable oil | 1 Tablespoon | |
Warm water | 1 1/4 Cup (20 tbs) | |
Oil | 1 Quart (For deep frying, corn or peanut) | |
For filling: | ||
Cooked meat | 1 Cup (16 tbs) , shredded or chopped | |
Refried beans | 1 Cup (16 tbs) | |
Cheese | 1 Cup (16 tbs) | |
Sour cream | 1 Cup (16 tbs) | |
Chopped veggies | 1 Cup (16 tbs) (Lettuce, tomato, onion, cilantro) |
MAKING:
In a large bowl, combine masa harina, baking powder, salt and mix well.
Add vegetable oil with 1 cup of water and stir well to combine. Mix to get a sticky dough and divide into 4 pieces.
Pat out each portion into 4-5” circle (1/2” thick).
Heat a skillet and cook the gorditas until both sides are lightly browned.
Heat oil to 360-375°F and deep fry the gorditas until done. Drain excess oil using paper towels.
Split open with knife and stuff with desired filling.
