Pollo Al Carbon -How To Grill Like A Mexican

Pollo al carbon with Carlos! Achiote-marinated whole chickens, slow-cooked on the grill. Like Pollo Loco or Pollo Regio, but better because it's homemade with love (and margaritas!)

Ingredients

Chicken/6 pounds chicken quarters 3 Pound
For marinade:
Oil 3 Tablespoon (for brushing on the grill)
Fresh orange juice 1 Cup (16 tbs) (from 4
Lime juice 1/4 Cup (4 tbs) (from 3 limes)
Maggi seasoning 3 Tablespoon
Worcestershire sauce 3 Tablespoon
Achiote paste 2 Ounce
Chicken stock powder 2 Tablespoon (bouillon powder)
Salt 1 Teaspoon
Black pepper 1 Teaspoon

Directions

GETTING READY:

Prepare chicken as shown in the video.

In a blender, combine orange juice, lime juice, magi seasoning, worcestershire sauce, achiote paste, chicken stock powder, salt, pepper and blend well.

Reserve ½ cup marinade and pour the rest over chicken. Allow to marinade for 2-4 hours.

Preheat grill and baste with oil.

 

MAKING:

Lay chicken as shown in the video on hot side of grill, cover with lid and cook for 2-3 minutes.

Move to cool side, and cook for 20 minutes. Repeat moving the chicken to hot side and cool side by flipping alternatively every 20 minutes and baste with generous quantity of marinade.

 

SERVING:                       

Serve with salsa, rice and enjoy!
