A quick Mexican accompaniment to baked chips herbs and flakes give flavor
With not too many calories as its made with tomatoes and spring onions and cooked in just 1 tsp of oil.
|Finely chopped garlic||1 Tablespoon|
|Finely chopped tomatoes||1 Cup (16 tbs)|
|Finely chopped spring onion whites||1/4 Cup (4 tbs)|
|Finely chopped spring onion greens||1/4 Cup (4 tbs)|
|Red chilli flakes||1/2 Teaspoon|
|Dried mixed herbs||1/2 Teaspoon|
|Finely chopped coriander||1 Tablespoon (dhania)|
In a broad non-stick, heat oil. Add garlic and sauté on a medium flame for a few seconds.
Add spring onion whites and greens and sauté on a medium flame for 1 minute.
Add tomatoes, mix well and cook on a medium flame for 3 to 4 minutes, while stirring occasionally and mashing lightly using a potato masher.
Add salt, chilli flakes, mixed herbs, sugar, coriander and 1 tbsp of water. Mix well and cook on a medium flame for 1 minute.
Cool slightly and serve with baked tortilla chips.
