Mexican Burger from COBB- A great recipe for Grill and Smoker.

Bbq rub | To Taste | |
Tomato | 1 , thinly sliced | |
Bacon slices | 10 | |
Onion | 1/2 , sliced | |
Vinegar | 1 Dash | |
Chipotle in adobo | 1 Tablespoon | |
Vegetable oil | 4 Tablespoon , divided | |
Mayonnaise | 1 Cup (16 tbs) | |
Peanut oil | 1/4 Cup (4 tbs) | |
Lettuce leaf | 8 | |
Manchego cheese slices | 4 | |
Nachos chips | 8 | |
Burger buns | 4 |
GETTING READY:
In a large bowl, combine ground beef with spice/ bbq ru and mix well. Make patties and pop into refrigerator for 2 hours.
Preheat the grill.
MAKING:
Wrap the tomato slices with bacon slices and keep it ready.
Heat a frying pan with oil and sauté onions in it. Add vinegar and chipotle. Saute for 2 minutes.
Add mayonnaise and stir well. Once done, keep it aside
Heat oil and fry the bacon wrapped tomato slices as shown in the video.
Heat the griddle plate of cob grill. Brush the grill and buns with peanut oil. Grill the burger buns and patties for 5 minutes (2 ½ minutes per side).
Place on baking tray to cook on indirect heat. Place cheese slices over the patties and cover with lid. Cook until cheese melts.
For assembling, place lettuce leaves, bacon wrapped tomato slices, patties, onion mixture on the bottom half of grilled buns and top with other half.
SERVING:
