All Veggie Nachos - Healthy Snack

All Veggies Nachos are full of so many delicious and nutritious ingredients. Perfect for your school's UnBake Sale.

Ingredients

Bell peppers 3 , seeded and cut into triangles (red, yellow or green)
Light sour cream 1/4 Cup (4 tbs)
Fresh lime juice 1 Teaspoon
Salt To Taste
Persian cucumber 1 , diced
Quartered cherry tomatoes 1/4 Cup (4 tbs)
Avocado 1/2 , pitted and diced
Shredded mexican blend cheese 3 Tablespoon

Directions

MAKING

Place the bell pepper on a plate. Set aside.

In a small bowl, whisk the sour cream and lime juice.

Drizzle the bell pepper with sour cream sauce and top with cherry tomatoes, persian cucumber, avocado and Mexican blend cheese.

 

SERVING

Serve the nachos to kids.
