Bell peppers | 3 , seeded and cut into triangles (red, yellow or green) | |
Light sour cream | 1/4 Cup (4 tbs) | |
Fresh lime juice | 1 Teaspoon | |
Salt | To Taste | |
Persian cucumber | 1 , diced | |
Quartered cherry tomatoes | 1/4 Cup (4 tbs) | |
Avocado | 1/2 , pitted and diced | |
Shredded mexican blend cheese | 3 Tablespoon |
MAKING
Place the bell pepper on a plate. Set aside.
In a small bowl, whisk the sour cream and lime juice.
Drizzle the bell pepper with sour cream sauce and top with cherry tomatoes, persian cucumber, avocado and Mexican blend cheese.
SERVING
Serve the nachos to kids.
