My version of the famous Puerto Nuevo Fried Lobster!
Lobster | 2 Large ((puerto nuevo lobster used)) | |
Mexican beer | 12 Fluid Ounce ((negra modelo beer used)) | |
Menudo seasoning | 1/4 Cup (4 tbs) | |
All purpose flour | 1 Cup (16 tbs) | |
Adobo seasoning | 1 1/2 Tablespoon | |
Oil | 4 Cup (64 tbs) ((For deep frying)) |
MAKING
1. Fill a large pot with water and bring it to a boil. Add the Mexican beer to it along with menudo seasoning. Drop the lobsters in this water and boil for about 3 minutes.
2. Remove the lobsters from the boiling water and put them in ice bath. Remove the lobsters from ice bath and cut them in half as shown in the video. Remove the intestinal track and clean them up.
3. In a bowl, combine all purpose flour with adobo seasoning. Mix well.
4. Sprinkle the flour mixture lightly on the lobsters and set them aside.
5. Place a large wok or frying pan on the grill and pour oil for deep frying in it.
6. Once the oil is hot, gently drop the lobsters in it and fry until golden brown. Remove on to paper towels.
SERVING
7. Serve accompanied with Mexican rice and refried beans.
