Betty demonstrates how to make a Mexican Beef Tinga. This is a hearty, spicy stew that can be served in the form of tacos, burritos, nachosor, in this case, on tostadas.

MAKING
1. In a deep skillet, heat olive oil until shimmering. Add onions and garlic. Cook over low heat, stirring constantly until onions are softened. Remove the skillet from heat.
2. Add cumin, oregano, coriander, shredded beef, beef broth, fire-roasted tomatoes, chipotle pepper in adobo sauce, brown sugar, and lime juice. Place the skillet back on low flame and bring to a boil. Stir occasionally and cook for about 20 minutes or until thickened.
FINALIZING
3. When thickened, spoon tinga mixture onto tostada shell. Top with jalapeno rings, sliced red onion, and shredded Monterey Jack cheese.
SERVING
4. Serve immediately and enjoy!
TIPS
For Shredded Beef:
Season sirloin steak with salt and pepper and place in a slow cooker and cook until very tender. You can do this a day before.
Store the cooked meat and container of meat juices in the refrigerator overnight, and then shredded the meat and removed the fat from the meat juices on the day of making the tinga.
You may use any type of beef you like
