Betty's Cucumber Salsa

Betty demonstrates how to make Cucumber Salsa. This a great side dish that can be served with a casual lunch or a more extensive dinner meal.

Ingredients

English cucumber 3/4 Medium , finely chopped ((with peeling left on))
Purple onion 1 Small , finely chopped
Ripe tomato 1 Medium , chopped finely
Green bell pepper 1 Medium , chopped finely
Jalapeno pepper 2 , chopped finely ((with seeds and fibers removed))
Garlic cloves 2 , mince
Fresh cilantro 2 Tablespoon , finely chopped
Fresh lime juice 3 Tablespoon
Olive oil 1 Tablespoon ((extra virgin or light
Salt and pepper To Taste (Optional)

Directions

MAKING

1. In a large bowl, combine cucumber, purple onion, tomato, green bell pepper, jalapeno, garlic, cilantro, lime juice, and olive oil. Toss well.  Season with salt and pepper if needed.

2. Cover with plastic wrap and pop in refrigerator until ready to serve.

 

SERVING

3. Serve and enjoy!
