MAKING
1. In a large bowl, combine cucumber, purple onion, tomato, green bell pepper, jalapeno, garlic, cilantro, lime juice, and olive oil. Toss well. Season with salt and pepper if needed.
2. Cover with plastic wrap and pop in refrigerator until ready to serve.
