Here is an easy way to make Enchiladas on the grill

Ingredients

For filling
Ground beef 2 Pound
Red onion 1/2 , cut
Roma tomatoes 4 , chopped
Green chilies 1 Can (10 oz)
Corn 1/2 Cup (8 tbs)
Black beans 1 Cup (16 tbs)
Enchilada sauce 16 Fluid Ounce
Cooked spanish rice 1 1/2 Cup (24 tbs)
Taco seasoning 1 Tablespoon (1 Packet)
Other ingredient
Grated cheddar cheese 1 1/2 Cup (24 tbs)
Tortillas 12
Sour cream 4 Tablespoon (For Garnish)

Directions

GETTING READY

1. Heat up the grill.

MAKING

2. Fry ground beef on the heated grill.

3. Add onions and tomatoes when the meat is no longer pink. Mix well and then put a can of green chilies to the pan.

4. Drop in corn and black beans to the meat mixture and mix everything well.

5. Pour some enchilada sauce in the aluminium pan and the remaining to the ground meat and bean mix. Add spanish rice and taco seasoning and mix everything well.

6. Simmer everything until the filling reaches the desired consistency.

7. In the aluminium pan with enchilada sauce, layer tortillas at the bottom. Spoon the filling on top. Generously sprinkle grated cheddar cheese. Layer with another round of tortillas followed by filling and cheese. Repeat until the pan is full. Sprinkle more cheese on top.

8. Place the pan on indirect heat for the cheese to melt and get all brown (around 25 minutes).

SERVING

9. Slice and serve the enchiladas with a dollop of sour cream on top.
